Kombu was born out of a love for flavour, fermentation and creativity. Our founder, Dave grew up in a food-centric world, where a life full of culinary adventure was inevitable. Backed by years of kitchen experience, a trusty science degree and countless food inspired holidays it seemed like a no brainer to start brewing a full-flavoured kombucha.
We handcraft our kombucha by brewing a giant pot of organic sweet tea, adding beneficial yeast & bacteria in the form of a S.C.O.B.Y. (Sybiotic Colony of Bacteria & Yeast) & wait for the magic fermentation process to happen. What we end up with is a refreshing, lightly effervescent sweet & tangy drink that’s not only good for you, it also tastes great.
At Kombu we do things a little differently and we believe we’ve created a kombucha like nothing you’ve ever tasted. We love big flavours, as much as we appreciate balance. Our kombucha is flavoured with locally sourced, seasonal & where possible organic produce, with flavour as our number one priority.
